As one way to further raise awareness about waste reduction and encourage greater efforts to reduce waste, we are continuously collecting recipes that make effective use of vegetable and fruit peels and cores discarded during daily cooking, as well as recipes for remaking leftover dishes.
Anyone can apply, so please feel free to share your ideas.

Application Details

We are seeking recipes for dishes that can be easily made by citizens, using the everyday cooking that each household prepares, in order to reduce waste.

Application Method

Please fill out the application form with your name, address, ingredients, and method, attach a photo of the dish, and submit it by mail, email, or in person at the counter.

Example Ideas for Eco Recipes

Ingredients (for 3 small bowls)

  • Pear skin...1 piece
  • Carrot...1/5 of a piece
  • Half a green pepper
  • Sesame oil... appropriate amount
  • Mirin... 1 teaspoon
  • Soy sauce... 1 teaspoon
  • Sesame... to taste
  • Shichimi Togarashi... to taste

How to make

  1. Chop the ingredients into thin strips.
  2. Heat sesame oil in a frying pan, add carrots, bell peppers, and pear peels in order, and stir-fry until they become tender.
  3. Add mirin and soy sauce to 2, and stir-fry until the moisture evaporates.
  4. Sprinkle with sesame seeds and shichimi togarashi to taste, and it's done!

Points

  • Shredding carrots with the skin on is even more eco-friendly.
  • It can also be deliciously enjoyed stir-fried with chirimenjako.
